WHITEHALL TOWNSHIP, Pa. — Capriotti’s Sandwich Shop is getting closer to opening its second Lehigh Valley location, bringing the national sandwich chain to a busy stretch of MacArthur Road in Whitehall Township.
The new restaurant is planned for 2221 MacArthur Road, where the Seibert family is preparing to expand the local franchise operation that began in Lower Macungie Township.
Ryan Seibert, who will help run the Whitehall restaurant, said the location is largely finished after a series of construction delays pushed back the family’s original opening plans.
The space has received new flooring, lighting, counters, dining furniture and kitchen equipment. The remaining work includes obtaining the necessary license and completing arrangements with suppliers before the restaurant can welcome customers.
Michael Seibert owns the franchise, while his son Ryan and Michael’s brother, Bill Seibert, are expected to operate the new Whitehall location together.
The family opened its first Capriotti’s in the Lehigh Valley in 2022 at 5585 Hamilton Blvd. in Lower Macungie Township. The restaurant has since served as the foundation for the family’s plans to expand the brand in the region.
The decision to pursue a Whitehall location came after customers repeatedly asked about another Capriotti’s in the area. The MacArthur Road site also gives the family a location along one of the Lehigh Valley’s heavily traveled commercial corridors.
The Whitehall restaurant had been targeted for an earlier opening, but construction work took longer than expected. The franchise team is now working through the final steps needed before opening.
Capriotti’s is known for its made-to-order sandwiches, including cheesesteaks and its signature Bobbie sandwich, which combines turkey, stuffing, cranberry sauce and mayonnaise. The menu also includes hot and cold subs, roast beef sandwiches and other specialty options.
The chain, which began in Wilmington, Delaware, in 1976, has grown to more than 175 locations across the country as it marks its 50th year in business.
For the Seibert family, however, the Whitehall restaurant is more than simply another franchise location. Michael has previously said the family hopes to continue expanding Capriotti’s throughout the Lehigh Valley.
The Whitehall opening date has not been publicly finalized. Once the remaining licensing and setup work is completed, the new restaurant will become the family’s second Capriotti’s location in the region.
