GRAND ISLAND, Neb. — Grand Island is set to get a new fast-casual restaurant as Chicken Salad Chick expands into Nebraska for the first time.
Scott and Tisha Miller have signed a seven-restaurant development agreement with Chicken Salad Chick that includes a location in Grand Island, along with six additional restaurants planned for Omaha and Lincoln. The agreement marks the brand’s first entry into Nebraska.
The couple first became interested in the restaurant chain after trying it during a trip to Destin, Florida. According to Chicken Salad Chick, that experience led them to explore bringing the concept back to Nebraska.
The Millers have business experience in the state. Scott has owned and worked as an agent with Miller Farrell Insurance since 1991 and also works in real estate. Tisha spent 25 years working on the family farm before joining Miller Farrell Insurance as an agent in 2021.
Chicken Salad Chick specializes in made-from-scratch chicken salad and offers several varieties along with sandwiches, soups, side dishes and desserts. Its menu includes options such as the Bacon Cheddar Melt and Chicken Salad BLT.
The company currently has more than 340 restaurants operating across the country, according to its latest information. The Nebraska expansion adds three cities to its growing footprint.
For Grand Island residents, the announcement brings a new restaurant option to the local dining scene, although there is not yet a confirmed opening date or location for the Grand Island restaurant.
Chicken Salad Chick has not announced when construction or restaurant operations will begin in Grand Island. Additional details are expected as plans for the Nebraska locations move forward.
